Cream Picante Sour Dip
Servings 16
Ingredients:
1 Cup Sour Cream – (you could use a reduce fat sour cream to cut down on fat and calories)1 Tbsp Salsa1 Tbsp Lime juice1/8 tsp Cinnamon
Method:
Combine all ingredients in small bowl. Mix well. Chill 4 hours.
Spicy Chicken Wings
Ingredients:
15 each Whole chicken wings½ Cup Soy sauce½ Cup Lemon juice2 Tbl Canola oil¼ Cup Honey2 each Garlic Cloves¼ tsp Hot pepper sauce
Method:
Preheat oven to 425 degrees
Place chicken wings on cutting board and cut the wing tips off (discard or save for stock) Cut the remaining chicken wing into 2 pieces at the joint. This will make 30 pieces. Mix remaining ingredients well making sure that honey is dissolved. Place chicken wings in a shallow baking dish and pour the marinade over all of the wings, rubbing the marinade on the chicken wings to ensure they are well covered. Place in refrigerator overnight or at least 4 hours. Place chicken wings on a baking sheet and bake for approximately 20 minutes. Tip: Cover baking sheet with aluminum foil or parchment paper, and spray with pan release, this will ensure the wings will not stick to the pan and will make clean-up easier.
Italian Sausage Soup
Ingredients:
½ lb Italian sausage hot remove from casing ( you could use sweet or mild )1 sm. Onion – diced1 ea. Garlic clove, crushed1 ea. 14 ½ oz. Chicken broth1 ea. 15 oz. Italian-style diced tomatoes1 ea. 15 oz. White beans ( cannellini or great northern )½ tsp Dry oregano, crushed½ tsp Dry marjoram, crushed½ tsp Salt ( if needed )1 dash Crushed red pepper flakes, to taste
Method:
In a large heavy saucepan brown sausage over medium-high heat; drain fat. Stir in the onion and garlic; cook and stir until soft, about 3 minutes. Add in all remaining ingredients, bring to a boil, lower heat and simmer for about 10-12 minutes.
Italian Stuffed Mushrooms
Ingredients:
24 each Mushrooms large stuffing1 lb. Italian Sausage Hot1 ½ Cups Red wine dry ( use a very inexpensive wine )S&P to tasteGranulated Garlic to taste
Method:
Pre-heat oven to 400 degrees
Wash Mushrooms well and then remove the stems save the stems to slice and sauté these for another time. Season the mushrooms to taste using the salt, pepper, and garlic. Remove sausage from casings and place the mushrooms packing it in the center, mounding the sausage and smoothing the top. Pour the red wine in the bottom of the dish. Place mushrooms carefully on top of wine. Bake covered until sausage is firm, approximately 20/25 minutes. Remove the mushrooms from dish and place in chafing dish or on a warm platter, for service.
